MEAT QUALITY


Beef and sheep carcases are divided into different pieces that we call primal cuts. A primal cut is made up of different muscles, which affect the eating quality.

What is Meat Quality ?
Meat Quality is:
- Visual quality 
- Eating Quality
- Muscle Structure

Visual Quality
We can see  what the quality of the meat is like by looking at
1. Colour
    - Lean
    - Fat
2. Fatness
   - Marbling
   - Selvedge

Muscle structure can affect the quality of the meat.

Eating Quality
- Tenderness
- Juiciness
- Flavour
